Pesto, Avocado & Proscuitto Crostinis
INGREDIENTS
  • 1 loaf french bread, cut into thin slices
  • 2 tbsp olive oil
  • 4 ounces goat cheese
  • 2 tablespoons fresh pesto
  • 2 Hass avocados
  • 1 lemon, juiced
  • 4 ounces thinly sliced proscuitto
  • salt and freshly cracked black pepper to taste
INSTRUCTIONS
  1. Preheat the oven to 350 degrees F.
  2. Place the sliced bread on a baking sheet and drizzle with olive oil. Toast the bread in the oven for 10-15 minutes until golden brown. Remove from the oven and let cool.
  3. In a small bowl, combine the goat cheese and pesto until evenly combined. Spoon a small spoonful on each of the crostinis and spread it on the bread.
  4. In another small bowl. mash together the avocado and lemon juice. Season the mixture with salt and pepper.
  5. Place a little spoonful on top of the goat cheese crostinis followed by a small piece of the prosciutto
  6. Dust the tops with freshly cracked black pepper and serve immediately.

Goat CHeese, Apple & HOney Crostinis
INGREDIENTS
  • 1 baguette, sliced into Β½ inch pieces
  • Olive oil
  • Kosher salt
  • Coast black pepper
  • 1 clove garlic
  • 6 ounces goat cheese
  • 1 teaspoon red chili pepper flakes
  • 1-2 apples (Fuji or granny smith work great!)
  • ΒΌ cup walnuts, diced
  • Honey
INSTRUCTIONS
  1. Preheat oven to broiler setting.
  2. First, drizzle baguette slices with olive oil, salt and pepper. Cook until the broiler for about 1 minute per side until brown.
  3. Meanwhile, slice apple into thin slices.
  4. Once the bread is ready, immediately rub on garlic.
  5. Let cool slightly, and spread with goat cheese and sprinkle with red chili pepper flakes if desired. I desired!
  6. Top with apple slices, pomegranate seeds (or dried cranberries), walnuts and honey.
