Dinner on a Dime : DIY Sushi Bowls

I am not going to hide it... I am sushi obsessed.  I actually have to watch myself so I don't eat more than the recommended amount of raw fish in a week.  Probably the biggest thing that stops me is how expensive it is.

You really can't get good sushi for less than $10 a roll... and if you do it's likely to be quite questionable.

All it took was a little grocery-store scouring and I came up with this recipe:

You will need...

The ingredients makes 2 bowls.  J is a much more picky eater than me and he LOVED it!

  • Basically microwave the brown rice, (I suppose you could do stove top, but this is the under 15 minute- hi I'm lazy because I work alot- way.)
  • Cut up the avocado (I only used one. Half for each bowl.)
  • Cut up the imitation crab. I got the legs so it was more like strips of crab, but there are various textures and shapes to choose from.
  • Drizzle soy sauce on top.
  • Wasabi (optional, for my spicy friends.)

I got all my ingredients from Ralph's, and they came to a total of about $8. That makes each bowl come out to about $4 each! AND I have enough for 1 or 2 more bowls with another avocado.

Too good to be true I tell you.

xoxo,

H
